This sure is a nice sandwich! In fact, I'm sorry to say this was the highlight of one particularly hard day at work. By 11:00am I was very pleased to have something to look forward to! I wonder if anyone else has had days like this...
Anyway, in this instructable you'll see we've made a lot of these delicious chicken sandwiches, packaged them up and put them in the freezer. On the way out the door just snatch one of these from the icy depths and you're on your way...sorted!

Step 1: Read on for the Cheat Sheet
Yes, we did make this easy on ourselves!
We bought a rotisserie chicken from the deli, and also a curry sauce. But the inspiration was all ours!
- Bread - we've used Sourdough Bread
- Chicken - shredded from the carcass
- sauce 560g (tikka masala - medium heat)
- cheese - sliced
- 1 onion - sliced
- salt and pepper to taste
Put the chicken carcass in a small pot and add some water. If you prefer not to eat the skin, then also add this to the pot. Place on a medium heat and let it boil for an hour or two, keeping the water topped up. Finally, let it cool down and remove the carcass.
The liquid left behind is now a basic chicken stock, and best of all you made it at home. Add some onions and herbs and you're on your way to a masterpiece. Well done!
Step 2: From the Bottom
Tip the curry sauce into a bowl and mix in the shredded chicken.
Lay out your bread and butter all pieces, leaving half of the slices aside as lids. Spoon on the chicken mix and spread it evenly around the bread. Next place the onion.
Step 3: Cheese, Please
Place your cheese slices, then pepper and salt to personal preference.
Step 4: Lock It In
Place your top slices and stack the finished sandwiches in one, two's or threes and sealing in a plastic bag or airtight container. These are good sizes that store well in the freezer.
I love to heat these in the sandwich press at my work. After about 10 minutes the cheese has melted and the sandwich is heated through. Now that lunch is over, what am I going to look forward to for the rest of my day...?
