12 egg whites
3/4 cup flour
1/4 cup cocoa powder
1 1/2 cup sugar
1/4 teaspoon salt
1 1/2 teaspoon vanilla extract
1 1/2 teaspoon cream of tartar
1 teaspoon espresso powder
Preheat the oven to 350 degrees
In a bowl add flour ,coco powder, and espresso powder and mix them together .
In the mixer add the egg whites ,salt,vanilla and cream of tartar on medium speed
When the egg whites comes foamy turn the speed up to medium high and start adding the sugar slowly .
Continue mixing the egg whites until it stick to the mixer like the picture
When adding the flour to the egg whites add 1/4 or 1/3 cup at a time and mix slowly after each addition .
Prepare 10 inch tube pan ( two part pan )
Pour the mix in the pan
And run a knife through it to remove any air bubbles
Bake it for about 40 to 45 minutes
When it is done ..
Immediately put the pan upside down over any kind of can and leave it to cool
When it is completely cool remove it from the pan . ( You can serve it with fresh cream ) .
To make a chocolate sauce : add a cup of whipping cream on the heat
Add 1/4 cup of chocolate chips and one teaspoon of butter and mix well
Let it warm before you pure it over the cake
Put the cake upside down
Pure the chocolate over the cake
To completely cover the cake
If you want to make some shapes put two teaspoon of white chocolate and one teaspoon of whipping cream on 20 sec in a microwave
And make a strait white lines
It is a light sponge and so delicious
