Introduction: Chocolate Bacon Matzo Brittle

About: Software QA Test Engineer/Technical Writer

It's that time of the year again, "The Festival of the Unleavened Bread" is upon us and in honor of this I created this instructable. Now this recipe would be fairly kosher if it wasn't for the bacon and the non parve butter, don't tell Nana!

Ingredients:

4 - Matzo slabs (I love this stuff)
2 cups Brown sugar
3 sticks Butter
1/2 cup Chocolate chips (I also used heath bar chips(awesome))
1/2 cup of chopped walnuts
6 slices of BACON (also awesome)
2 tsps Vanilla extract

Step 1: Step 1 - Cook Some Delicious Bacon

Probably the most important part of the process. Properly cooked bacon is the key to most things in life.  In this case the bacon will need to be cooked extra crispy since it will be crumbled up into the brittle.

Step 2: Step 2 - Lay Cooked Bacon Out to Drain Off Grease

When bacon is done lay out on a plate covered with a paper towel.

Step 3: Step 3 - Prep Baking Pans

Line two baking pans with foil. This is only optional if you like to wash pans that have been totally fracked up by molten sugary rock.

Step 4: Step 4 - Put 2 Matzo Slabs in Each Pan

They will probably over lap a bit since they're so large.

Side note: You can go ahead and fire up you oven now. I preheated it to 385 F

Step 5: Step 5 - Making the Molten Sticky Stuff

Over medium low heat melt the three sticks of butter. Add the brown sugar making sure to keep stirring this no matter what. I don't know what will happen if you stop stirring because i didn't. I've heard rumors that something terrible will happen if you stop.

When the mixture is silk smooth add the vanilla and simmer for another 2-3 minutes. Remember: DO NOT STOP STIRRING.

Step 6: Step 6 - Drizzle for Shizzle

Now its time to drizzle this lava like mixture over the matzo, cover about 80% of the matzo. Then take the bacon slices and crumble them over the drizzled matzo.

Step 7: Step 7 - Add the Nuts, Chips and Bake

Now add your chopped nuts and chocolate chips and bake for 8-10 minutes in the same oven you preheated in step 4.

Step 8: Step 8 - Bust It Up and Enjoy

After letting it cool for an hour in the fridge, bust it up and eat. If you did everything right, it will taste awesome. Just don't tell your Nana Ester that it has bacon in it.
