Introduction: Chocolate Caramel Turtles

The farmer's wife introduced me to these easy to make turtles long ago. They bring back memories of heading across country with the  intention of sharing a homemade treat with my host but instead finding myself dipping into the box, carefully rearranging so no one would notice. Mile after mile, turtle after turtle.  It was a long trip......but , oh so sweet!

Chocolate, nuts and caramel-what more can LinuxMom ask for in a candy?



Step 1: Ingredients and Supplies


25 caramels
2 Tablespoon rich cream (May substitute Half and Half)
1/2 bag of chocolate chips
4 oz White bark coating
24 Walnut halves
24 Pecans

Waxed Paper (buttered)
Microwavable small bowls
Small sauce pan
spoons

Step 2: Assembing the Turtles

1.Arrange nuts on  buttered waxed paper in groups of four. (These are the turtle legs)

2.Melt the caramels over low heat on stovetop (or microwave according to package directions). Add cream and stir in well. Allow to cool slightly (if it is too hot the caramel will spread to much) and use spoon to place a large dollop over the center of the nut clusters.  A second layer will add height to your turtles.

3.Allow nut/caramel clusters to cool 15 minutes.

4.Melt bark coating in microwave according to package instructions (Heat in increments of 30 minutes at 70% power, stirring every 30 minutes until smooth.)

5.Using a tablespoon pour bark coating over half of nut and caramel clusters. Spread gently. Caramel should be covered but the nuts should be exposed at their tips.

6.Melt chocolate chips according to package instructions. (Melt in microwave at 50% power in 30 second intervals. Stir between intervals until chips are smooth and melted.)

7.Spoon melted chips over remaining nut and caramel clusters.

8. Cool and drizzle with remaining melted bark or chips to decorate.

9. Let set for 1 hour.
