Makes 12 muffins.
1 1/2 - 2 cups (190 to 250g) all purpose flour
1 cup (200g) sugar
1/2 cup (43g) unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs lightly beaten
1 cup (240 ml) milk
1 cup (1 stick/230g) butter melted
1/2 cup (84g) chocolate chips
Suggested toppings: chocolate chips, icing, butter,strawberries
Preheat oven to 375°F (190°C). Grease or line with paper cup-cake liners, a 12 cup muffin pan.
Combine the flour, sugar, cocoa, baking powder, soda and salt in a medium bowl. Whisk to blend.
Add the eggs, milk, and melted butter. Stir until just blended. Stir in the chocolate chips. Spoon into the prepared pan.
Bake until puffed and a toothpick inserted in centre comes clean; this should take about 18 to 20 minutes.
Invert and cool
