Introduction: Chocolate Covered Matzo

With the holidays approaching, there's so many delicious sweets to be consumed and prepared! Chocolate covered matzo is one that my family has always enjoyed for years. This recipe has been passed down in my family for over 60 years and it is a tried and true classic. I hope that you will enjoy this tasty treat as much as we all do!

Step 1: Ingredients

For this recipe, you will need:

  • 1 cup brown sugar
  • 1 cup unsalted butter
  • 1 cup chocolate chips
  • 4 pieces of matzo

You will also need to line a baking sheet with aluminum foil, and coat the foil with nonstick cooking spray.

Step 2: Let's Cook!

Preheat your oven to 375°F. Place 4 pieces of matzo onto the lined baking sheet, breaking them to fit if necessary.

Put the 1 cup of butter and 1 cup of brown sugar into a saucepan on medium-high heat. Let the butter melt and constantly stir the brown sugar into the butter. Bring to a boil and let the mixture boil for 3 minutes, constantly stirring, being careful not to burn it.

After cooking the mixture for 3 minutes, remove from heat and cover the sheets of matzo with the brown sugar and butter mixture. Cover each sheet completely using a rubber spatula.

Place the baking sheet into the oven and immediately lower the temperature to 325°F. Cook for 10 minutes, and then remove from the oven.

Step 3: Chocolate!!!

After 10 minutes of baking, remove the matzo from the oven. The brown sugar and butter mixture on top will look nice and bubbly. Immediately spread 1 cup of chocolate chips on top of the matzo, and then let them sit for 5 minutes.

After letting the chocolate sit and melt for 5 minutes, spread the chocolate all over the matzo using a rubber spatula, being sure to cover entirely.

Place the baking sheet into the freezer for 1 hour to set, or the refrigerator for 2-3 hours.

Step 4: Eat!

Remove the chocolate covered matzo from the freezer/refrigerator and break it up into more manageable bite sized pieces. Eat a ton and then store the rest in either the refrigerator or freezer. I wish I could tell you how long it will keep for, but it's never lasted that long in my house!

In the US South, this is made on soda crackers and called Pine Bark. Matzos would be a better substitution because the topping wouldn't leak through the separations in the crackers. It's so delicious!
