Introduction: Girl Scout Chocolate Thin Mint Cookies

Picture of Girl Scout Chocolate Thin Mint Cookies

This is a recipe for chocolate-dipped mint cookies, similar to the thin mint girl scout cookies.
Tools required:
mixing bowl, mixing spoon, rolling pin, cookie cutter, measuring cups/spoons, cookie tray, plastic wrap, spatula

Here is the recipe:
Chocolate Covered Chocolate Mint Cookies
Makes 30 cookies

Ingredients for cookies:
3 Tbsp butter
1 egg white
1/4 cup packed brown sugar
pinch of Baking Soda (1/16 of a tsp, but if you get more it is ok)
1/2 tsp salt
1/4 cup cocoa powder
1/2 cup flour (plus 1/4 cup)
2 drops pure peppermint or mint oil (If using mint or peppermint extract it'll be about a 1/4 tsp if not more, as the extract is not as concentrated as the oil)

Ingredients for mint buttercream layer:
2 cup packed powdered sugar
4 Tbsp melted butter
2-3 drops pure peppermint oil (again you will need more if using extract instead of oil)
1/2 tsp milk

Ingredients for melted chocolate:
1 1/2 c milk chocolate chips

Step 1: Mix Cookie Dough

Combine all ingredients for cookie dough together.  Add the extra 1/4 cup flour as needed, until dough is roll-able and not sticky at all.

Step 2: Roll Cookie Dough

Flour the surface of a clean counter and use a rolling pin to roll the dough very thin.

Step 3: Cut Cookie Dough

Use a cookie cutter to cut rolled dough into desired shapes.

Step 4: Bake

Bake at 325 F for 4-7 minutes on a greased cookie sheet, or until cookies have firmed (for crunchier cookies let them cook a bit longer). Remove from oven and cool completely.

Step 5: Mix Mint Buttercream

Mix mint buttercream ingredients together (with a spoon, and then by hand) until frosting dough becomes thick, you may need more powdered sugar.

Step 6: Roll Mint Buttercream Frosting

Spread powered sugar on a clean counter top and use a rolling pin to roll out the frosting-dough to 1/4″ thick.

Step 7: Cut Mint Buttercream Frosting

Use the same cookie cutter that you used to cut the cookies, and cut frosting-dough into your chosen shape(s) and place on top of cooled cookies.

Step 8: Melt Chocolate

Place chocolate chips into microwave-safe glass bowl.  Heat chocolate for 1 minute in microwave and stir. Continue to heat for 30 second intervals until chunks are gone.

Step 9: Dip Cookies

There are two ways to cover the cookies in melted chocolate.   The first way is to dip them one side at a time in melted chocolate.
The second way is to use a spoon to place a spoonful of melted chocolate on top of a cookie.  Use the spoon to spread the chocolate evenly over the cookies surface and sides.

Allow cookies to dry on a piece of plastic wrap. Place cookies in the refrigerator, or freezer to let the chocolate set.

I am very glad you are enjoying them; i hope your friends/family are enjoying them as well! :D

You could experiment with new flavours as well. Instead of mint you could do vanilla, lemon, cherry, raspberry, orange, cinnamon, strawberry, caramel -- any flavour you want! :)

haha yes there very popular here! its rare that five out of the six enjoy the same thing (the sixth being my fussy 6r old sister who hardly ever eats anything different )
