Introduction: Chocolate Cupcakes With Coconut
Amazingly delicious, and extremely easy and quick to make.
Step 1: Ingredients
- 2 eggs
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 cup shredded coconut
- 1 cup sugar
- 1 1/2 cups flour - cake or all purpose
- 1/2 teaspoon baking powder
- 200g chocolate
- pinch salt
You will also need some cupcake liners.
Once you have everything you need, you should go ahead and preheat the oven at 180 C / 350 F because it will take you under 10 minutes to mix everything together.
Step 2: Mixing Up
The first thing you have to do is to combine the baking powder with the flour in a separate bowl (you'll need them in a minute).
Now, one by one, using a fork, combine the ingredients together in the order I'll tell you bellow. Each time you add an ingredient, mix it together until you obtain a homogenized mix.
Start off by combining the eggs with the sugar.
Continue by adding the oil.
Next up, is the milk.
Now, add the coconut and the salt (you can add those two together).
And lastly, you'll have to add the flour with the baking powder.
Step 3: Tray Time!
Using a spoon, fill in the cupcake liners with the batter.
Now, take pieces of chocolate and either put them on top of each cupcake (it will sink in a bit), or insert them inside the batter to completely cover them.
And you're done. Bake them in the pre-heat oven (180 C / 350 F) for about 45 minutes or until a toothpick comes out clean.
