Step 2: Measure
2 cups flour, 3/4 cup granulated sugar, 1/4 cup cocoa, 1 tbsp baking powder, 1/2 tsp salt, 1/2 tsp cinnamon, 1 egg, 1 cup milk, 1/3 cup cooking oil; FILLING: 1/4 cup skim milk powder, 2 tbsp hot water, 1 tsp butter or margarine, 1/4 cup almond flavouring, 1 cup coconut; flake or medium
Step 3: Mix
In large bowl combine flour, sugar, cocoa, baking powder, salt and cinnamon. Stir. Make well in center. In small bowl, beat egg slightly. Stir in milk and cooking oil. Pour into well. Stir to moisten. Fill greased muffin cups 3/4 full.
Step 4: Filling
In small bowl, mix milk powder with hot water. Stir vigorously to blend well. Add butter and almond flavoring. Mix. Stir in coconut. Form into many balls as muffins. Push into top center of each muffin. Bake at 400 Fahrenheit (200 Celsius) in the oven for 20 to 25 minutes. Yield: 16 muffins.
