Chocolate Marshmallow Cookies

Here is the recipe for chocolate marshmallow cookies. 

These cookies are quick, simply, and cheap. You don't have to worry about them breaking your bank or taking up lots of your time. 

You will need the following ingredients: 

Chocolate Marshmallow Cookies
-15 marshmallows (cut into thirds)
-1/3 Cup cocoa powder
-2 Cups flour
-1 teaspoon baking soda
-1 teaspoon salt
-1 Cup sugar (plus 1/2 Cup sugar for rolling)
-1 Cup crisco
-1/2 Cup brown sugar (firmly packed)
-2 unbeaten eggs
-1 teaspoon vanilla

Step 1: Prepping the Oven

Preheat your oven to 400 degrees F

Step 2: Prepping the Marshmallows

Take about 15 marshmallows and cut them into thirds. I use scissors for this but you could use any cutting utensil that you feel comfortable with. 

place them on a plate or small cutting board when finished an transfer them to the freezer while you prepare the dough. 

Step 3: Dry ingredients for the dough

For this step you will need to use the flour, baking cocoa powder, baking soda, and salt. 

In a bowl mix add in this order

1. add 2 cup of flour

2. add 1/3 cup of baking cocoa powder

3. 1 teaspoon of baking soda (this is not the same as baking powder)

4. 1 teaspoon of salt


Once you have added all dry ingredients listed above, whisk until they are well blended. 




Step 4: Blended ingredients for the dough

For this step you will need to use the sugar, brown sugar,  and shortening. 

In a larger separate bowl add in this order

1. 1 cup of sugar

2. 1/2 cup of brown sugar ( make sure that you firmly pack into measuring cup)

3. 1 cup of shortening. I use vegetable shortening but you can use any or lard if you have it

Blend all ingredients together until creamed. You can do this in a mixer or by hand. 

Step 5: Wet ingredients to the dough

Once You have creamed the blended ingredients you will need to add the eggs and vanilla. 

Add to the mixture while mixing in this order. 

1. 2 unbeaten eggs one at a time

2. 1 teaspoon of vanilla

Mix these until well blended. 
Is there any reason not to just use butter instead of shortening? (I'm pretty experienced with using my oven for cooking all kinds of animals, but I have very little experience when it comes to cooking sweet things.)

The only reason that I used shortening was because it was an old recipe. You can use butter, any form of shortening (animal or vegetable), and lard. I just followed my babcia's recipe.

(Not that it matters, but it seems that my previous parenthetical statement was unclear. I just meant that I've cooked a lot of meat in my oven but very few sweet things.)

10/10 ! I try to do this recipe the next week xD
I made something like this years ago, but did not think to freeze the marshmallows. All I had were multi-colored minis, so the resulting cookies were brown lumps with rainbow ooze leaking out of the cracks. They were still tasty and the recipe was re-named Horta Cookies. Yours are much more photogenic.

How do you get it to have that gooey middle. When I made them there was just a space where the marshmallow was.

Make sure that you make the space large enough in the beginning of making the dough ball and that the mixture has enough dough on all side inclosing it. Plus, make sure you freeze the marshmallows while making the dough. It helps it from getting too hot and breaking out of the cookie during baking.

These look absolutely delicious! I can't wait to try them out! Is there a possible way to burn the marshmallow filling? I would love to avoid any possible mistakes! Awesome!

Just make sure that you put them in the freezer while you are making the dough. This helps make them not as sticky to the touch and helps get them gooey on the inside without them popping open and burning.

Question - is it 1 cup or 2 cups of flour? Cuz the ingredients list says 2 cups but the instructions just say 1 cup.

What about making these ahead of time? And would these work with, say, homemade marshmallows?

Also, the local supermarket sells these marshmallows, where some are vanilla and the rest are strawberry.

Yes, you can make them ahead of time and freeze them.

As for the marshmallows, you can use home or store bought, the important thing is that you freeze them before putting them in the cookie. If they aren't frozen the center can burst and goo all over the cookie.

Sure, using flavored marshmallows is a great way to spice it up!
