When you think of chocolate pie, you're thinking of this pie - decadent, luxurious, fudgey chocolate filling baked into a light and flaky crust, topped with homemade whipped cream and chocolate shavings.  This is no meringue, no French silk business, no pudding pie.  This is homemade chocolate pie as it was meant to be.

As with all good things, this pie takes time and effort (mostly the effort of waiting for it to chill before serving!), but once you try it, you'll never go back.  Accept no imitations, no short cuts, and be prepared to throw all other recipes away.

1 Pre-Baked Pie Crust
Store bought or
Use this recipe!

Filling:
  • 6 oz semisweet chocolate - chips or bar
  • 4 oz (1/2 cup) sweet unsalted butter
  • 3 eggs
  • 1/8 teaspoon salt
  • 4 oz (1/2 cup) sugar

Topping:
  • 12 oz (1 1/2 cups) heavy cream
  • 3 tablespoons sugar
  • Chocolate shavings (opt)

The most amazing pie ive ever had. I think next time i'd put a little less chocolate inside, so it tastes more graham crackery... but overall, amazing.

i used keebler everready graham cracker crust.. and bc i live in canada, there was no heavy cream available so i used 35% whipping cream... but still everything turned out amazing.

Would you consider adding to the instructions that if you use a store-bought crust, it should be deep-dish? I got regular ones and now I'm left with a ton of leftover filling and don't know if I'll have any room for the topping. If only I'd known, I'd have bought a deep crust. :(

for the part where you have to mix in the eggs to the chocolate sauce, do you mix it while its in the double boiler or do you take the sauce off the heat and then mix in the eggs??

I made this pie for Thanksgiving. It was so easy to make. <---- Coming from a complete and total dunce in the kitchen.

There was a small piece left over so I had it for breakfast this morning. Lucky me! And, to explain the leftover, this pie was one of four large desserts offered.

so far, so good as it cools out of the oven! I made a double batch to completely fill the larger pie crust. turned the heat up to 350 and baked an extra 15 mins. Will let you know how it turns out!

Made it. it was a little bit too sweet for me, but otherwise very good.


A note to other makers: If you use a small pie crust, don't fill all of it, unless you want a complete chocolate pie. I did that, and later took some of it out and there was a little dip in the middle...

A question to the author:

How do you whip whipping cream in solid (like stable) whipped cream? i whipped it but it was all liquid-ish.

You didn;t whip long or fast enough probably. I have a stand mixer and it takes about 3-5 minutes of whipping to get the nice peaked whipped cream. A hand mixer will work just as well, but it really does take longer than you'd think!

Oh my goodness.

I made this at the weekend to go with Sunday lunch. It was stupidly popular; everyone went back for seconds. Absolutely delicious.

It certainly took longer to cook than in the instructions, though. After 25 minutes the filling was still liquidy. I eventually cooked it for around 55 minutes, and although it was done it never reached the "cracked" stage you describe. I would have cooked it for longer but the top was threatening to burn. Nevertheless, the finished product was still super tasty.

Do you have a thermometer inside your oven?  Mine is on average about 50 degrees off the mark. I wonder if this could have been part of the problem?

Nonetheless, I'm glad it turned out to be such a hit! I was also amazed at how delicious it is. I've completely changed my whole outlook on chocolate pie!

I have been looking for this recipe for 20 years! It is wonderful. Try it with a Hazel nut crust, and sprinkle sliced Hazelnuts on the top along with the chocolate.

First, this was delicious, not what I expected but still crazy good.
 
Next disclaimers:
I live at altitude (5000+ ft above sea level).
I have no prior experience with baking, none. I did make some calls to others more experienced.
 
A couple of things I ran into, melting the chocolate took way longer than I thought so I think that my eggs got over whipped (they were on the mixer for a while). The wife wandered past and asked if I was making meringue.
 
I had to bake it for nearly 50 minutes before the filling set up, maybe too much filling or too small pie pan or maybe the altitude.
 
I used confectioners’ sugar in the whipped cream, mixed really easy.
 
Bottom line: This was really easy, I did this with my 2 ½ year old helping and I had never baked before, it came out awesome.
