Introduction: Chocolate Porter Silk Pie With Toasted Coconut and Homemade Crust

This is my recipe for a Chocolate Porter Silk Pie! I made mine with home brewed Chocolate Porter, but any store bought Porter or Stout will do. Here are the ingredients!

Graham Cracker Crust

1 1/2 cups finely ground graham cracker crumbs
1/3 cup white sugar
6 tablespoons melted butter

Chocolate Porter Silk Pie Filling

12 ounces semi-sweet chocolate chips (or you could use chopped bitter chocolate)
24 large marshmallows
Pinch of salt
2/3 cup Porter(or Stout)
1/3 cup heavy cream or evaporated or condensed skim milk
1 teaspoon vanilla
1 tablespoon quality whiskey or crème de cacao (optional)

Step 1: Make the Crust!

I was going to buy a graham cracker crust but I figured it wouldn't be too tough to just make one! Below is what you will need, followed by how to do it!

Graham Cracker Crust

1 1/2 cups finely ground graham cracker crumbs
1/3 cup white sugar
6 tablespoons melted butter

Mix cracker crumbs, sugar, melted butter, and cinnamon until thoroughly blended.
Press mixture into 8 or 9 inch pie plate.

Bake at 375 degrees F for 7 minutes.

Cool.

Step 2: Lets Make the Filling!!

Next it is time to make the filling!! Below you will find the ingredients and the steps for making it. You will also see my make shift double boiler. The directions say to let everything sit together after heating the cream and beer, but it just would not blend together like I hoped so I used I used a double boiler and mixed it all together.

Chocolate Porter Silk Pie Filling

12 ounces semi-sweet chocolate chips (or chopped bitter chocolate)
24 large marshmallows
Pinch of salt
2/3 cup Stout (or Porter)
1/3 cup heavy cream or evaporated or condensed skim milk
1 teaspoon vanilla
1 tablespoon quality bourbon or crème de cacao (optional)
  • Place chocolate chips, marshmallows, and salt in a medium bowl.
  • In two separate saucepans, heat Stout and heavy cream until very hot but not boiling. (Don’t heat them together in one container, or the cream will curdle.)
  • Pour the Stout and cream over the chocolate and marshmallows and let sit for 5 minutes. Gently whisk together to thoroughly blend. Add the vanilla and bourbon (if using), continuing to whisk until very smooth. This is where I ended up using a double boiler. 
  • Pour the mixture into the crust and refrigerate 4 to 6 hours or until firm. Garnish with whipped cream and shaved chocolate or toasted coconut.

Step 3: Add the Topping!

I just bought a bag of sweetened coconut and toasted it on a cookie sheet in the oven at 350 deg F for about 5 minutes and then spread it across the top!
