Introduction: Chorizo and Eggs
This is my version of a super simple breakfast of Mexican Chorizo and eggs.
You'll need 4 ounces Mexican Chorizo and 2 to 3 eggs.
Step 1: Cook the Chorizo
Start out with a hot pan. Add the chorizo, break it into chunks with a silicone or wooden spoon and cook over medium heat, stir constantly until cooked thoroughly and lightly browned about 8 minutes.
Step 2: Add the Eggs
Crack the eggs into the Chorizo and mix well,
cook about 3 minutes, stir occasionally.
Step 3: Serving.
You can do it the easy way and dish into a bowl and garnish with cheddar cheese and toast, or wrap it in a tortilla with cheese if your on the go. this is a very easy and delicious breakfast.
