For vegetarian/vegan make aioli with avocado and obviously 86 chicken :)
Step 1: Ingredients
1/2 cup of rice
1 chicken breast
1 or 2 avocados (depending on size)
For the aioli:
2 garlic cloves
1 tblspn basil
1/2 cup of mayo
For the vinaigrette:
1 tblspn of olive oil
2 tblspn balsamic vinegar
Salt and pepper for taste
Step 2: Cook Rice
Place rice and water in a pot.
Bring to boil.
Let simmer for 20 min on mid-low with lid.
Turn burner off, remove lid and let sit for 5 min.
Put rice in a bowl and place in fridge to cool down.
Step 3: Season Chicken
Step 4: Cook Chicken and Cool Sous-vide
Once pan is hot sear chicken on both sides.
Check to reach 165C to remove any pathogens.
Turn burner off and let chicken cool down for a minute.
Place chicken in a ziplock bag and put in a ice bath.
Step 5: Dice Cooled Chicken
Step 6: Make Aioli
Add 1 tblspn of dried basil.
Add 1/2 cup of mayo.
Mix very well so every bite will have garlic and basil.
Step 7: Make Vinaigrette for Cucumbers
1 tblspn olive oil.
2 tblspn balsamic vinegar.
Salt and pepper for taste.
Let sit don't mix yet
Step 8: Peel and Dice Cucumbers.
Step 9: Mix Cucumber and Vinaigrette
Mix them both well
Step 10: Dice Avocado
Step 11: Prep Station
Cooled cooked rice
Cucumber with vinaigrette
Step 12: Make the Wraps ! (finally!!!)
Spread aioli thin
Add happiness because you're done !
Step 13: Enjoy !
