Introduction: Citrus Chicken Salad

You can also add lime slices into the salad if you want it to be more citrusy (is that even a word? lol)

Step 1: Method

3 skinless chicken breast portions

2 oranges

1/2 tsp dijon mustard

1 1/2 tsp honey

2 tbsp olive oil

1 1/2 c finely shredded cabbage

150 g carrots, slice thinly

1 green onion

1 celery stick, cut into batons

1 tbsp chopped fresh tarragon

1 lime

salt and black pepper to taste

Grill chicken under preheated broiler and cook for 5 mins on each side, until golden brown and cooked through. Set aside to cool

Peel oranges, cutting off all pit and get the segments, set aside

Grate the rind and juice out of one of the oranges, place into a bowl

Stir in mustard, 1 tsp of honey, oil, seasoning into orange juice

Mix in cabbage, carrots, green onion and celery and let stand for 5 minutes

Squeeze the juice of the remaining orange and mix with remaining honey and tarragon

Peel and segment the lime and lightly mix the segment into the dressing with the reserved orange segment and seasoning to taste

Slice chicken and stir into the dressing with the citrus

Place cabbage into plate, add chicken, and serve
