Gavarfali dhokli/ cluster beans and wheat flour dumplings , two fibre-rich ingredients – gavarfali (cluster beans) and wheat – come together in this delicious recipe, making it a really healthy treat!

Serve hot with phulkas or can be had as is. String and boil the cluster beans before use. This is a rajasthani dish and my favorite , mom thought me this recipe .
Lets Begin!

Step 1: Ingredients

For The Dhokli

1. 1/2 cup whole wheat flour

2. 1 tsp carom seeds

3. 1/2 tsp red chilli powder

4. 1/4 tsp turmeric powder

5. 1/2 tsp cumin powder

6. 1 tsp oilsalt to taste

7. 1 cup mix of pulses

Other Ingredients

1. 1 tbsp oil

2. 1/2 tsp cumin seeds (jeera)

3. 1/4 tsp mustard seeds

4. 2 cups cluster beans (gavarfali) chopped

5. salt to taste

6. 1 tsp ginger-green chilli paste

7. 1/4 tsp turmeric powder (haldi)

8. 1 tsp red chilli powder

9. 1/2 tsp cumin powder

10. 1 tsp dhania/ coriander powder

11. 1 sprig curry leaves

12. Salt to taste

Step 2: Method

Combine all the ingredients together in a bowl and knead into firm dough using enough water.

Divide the dough into 20 equal portions and shape them into rounds.

Press each portion into a flat circle by pressing between your palms and then a small hole in between with your thumb ( this helps them cook evenly and faster). Cover and keep aside.

Step 3: Add Them All!

In a pan add plenty amount of water to cook the cluster beans and dhokli .

When the water starts boiling add the cluster beans and dhokli and cook them till they are done.

Now strain cluster beans and dhokli and store the water. Add the red chilli powder, turmeric, cumin, dhania powder and salt to the strained cluster beans and dhokli.

In a pan heat oil add cumin seed and mustard seeds and when they crackle add the cluster beans and dhokli mixture.

Now add a little amount of store stock to the mixture so that they are well combined.

This will take around 15 minutes to cook

Step 4: See What You Have Made!

Now this is ready to serve

Serve with a coriander and chopped onion if you like on it.

It will look like same i have mentioned in photos

For those who aren't familiar with these ingredients:<br><br>The Guar or cluster bean, with the botanical name Cyamopsis tetragonoloba, is an annual legume and the source of guar gum. It is also known as Gavar, Guwar or Guvar bean. Aside from being tasty they are partly what thicken the sauce. If you substitute string beans you may have to add cornstarch to the broth to thicken. Also the split peas (pulses) add a nice texture to the recipe. Make sure they have soaked for at least an hour before adding to the stock.<br><br>Carom is also called Ajwain. If you can't find it you can get a vague approximation with dried thyme or maybe try fenugreek seeds, crushed.<br><br>Not sure what is meant by oil salt.<br><br>This looks yummy: can't wait to try.<br>
<p>Thanks for information.</p><p>You have to try for sure..:)</p><p>Also plz vote if you like.:)<br></p>
