Introduction: Coconut Cream Jello Shots

I've never been a huge fan of jello.  I really like making it, but I've never been a huge fan of the taste or texture until I discovered this recipe for a jello based on condensed milk and I've been trying different versions of it ever since then.  I like coconut and alcohol, so I came up with this recipe for delicious coconut cream jello shots.

Step 1: Ingredients

For this recipe you will need:
-Coconut rum
-coconut water (this sounds exotic, but it's kind of a trendy thing right now, I guess.  I got mine for this recipe at Walgreens.)
-14 oz can sweetened, condensed milk
-2 packets of gelatin (this box comes with 4 packets)

Step 2: Mixing Jello

To make the jello, pour 1/2 cup of room temperature coconut rum into a bowl, or other container that you can add more liquid to.  I like to use a big measuring cup because it makes it easy to determine how much of each ingredient to add and it makes it easier to pour into molds.  Sprinkle the two packets of gelatin on top and allow the gelatin to thicken up.  While the this is happening, pour 1 cup of coconut water and 1/2 cup coconut rum into a microwave safe bowl and heat in the microwave for a minute or two.  Add that to the gelatin mixture and stir together well until the gelatin is fully dissolved.  Open your can of condensed milk and add the entire can of milk to the coconut rum, gelatin and coconut water mixture and stir well.

Pour this mixture into your molds or cups or whatever you are using to make your jello shots and put them in the fridge or freezer until they solidify.

Step 3: Eat Your Delicious Jello

I found it easier to get my jello shots out of their molds after they had been frozen and then ran the mold under some really hot water.  This ice cube tray worked well as well as individual silicone baking cups.  If they have frozen completely, arrange them artfully on a tray, let them thaw out and eat them!

I love the idea of coconut cream jello! Can you make it without coconut rum and still get a strong coconut flavor?

Yeah, it might just taste more sweet than coconut-y
