Step 1: Ingredients
-1 pound Chicken cut into pieces
-1 can Coconut Milk
-1 ripe Mango
-1 Tablespoon Ground Coriander
-1 teaspoon Salt
-1 can Black Beans
-1 cup Rice
Step 2: Instructions
-Heat beans in a small saucepan.
-Heat a large frying pan to medium heat. Add a small amount of olive oil to the pan to keep the chicken from sticking to the bottom of the pan.
-Add the chicken to the pan and cook stirring frequently. While chicken is cooking, sprinkle it with the Coriander. Cook chicken until it's cooked through and no longer pink inside.
-When the chicken is done cooking stir in the Coconut Milk and salt. Bring it to a simmer and let it simmer for 10 minutes stirring occasionally.
-Peel and chop the Mango into small pieces and add it to the Chicken and coconut milk mixture and simmer for 5 more minutes.
Optional: if you prefer fresh mango over cooked mango you could keep the mango out and put it on top of the chicken when you serve it.
