What you have left is dry shredded coconut meat. Probably it's high in protein. Mix it with some eggs and fry it. It'll fluff up like a pancake and be really satisfying to eat. Just the thing for when you're done surfing, or on your way to surfing.

If you do a lot of coconut milk making, it is best to make a bag for squeezing the shredded coconut meat. It is best to use synthetic cloth like those used for making sports jersey. equip it with a draw string. Make several passes with the sewing machine on all seams so that it will not break when you wring and squeeze out the milk. Believe me, you will have to to get the most of it. Here in the Philippines, we use a lot of coconut milk and there are already motor driven coconut shredders, as well as hydraulic press for squeezing out the juice where you buy the bare coconut nut... But the instructions here are a lot better than what was shown in the cookbook, The Joy of Cooking where you are instructed to hit the nut with a hammer. ha ha Nice job!!!
