Introduction: Cookie Dough Ice Cream Sandwich Recipe

Ingredients:

1/3 cup light brown sugar

1/4 cup granulated sugar

3 tsp milk

2 tsp pure vanilla extract

a pinch of salt

3/4 cup mini chocolate chips

1 cup all-purpose flour

1 stick of unsalted butter, softened

1 quart of cookie dough ice cream, softened

Supplies:

8x8 baking tray

parchment paper

large spoon

mixing bowl (alternative: electronic mixer)

Step 1:

Combine sugars, milk, vanilla, salt, butter, flour, & chocolate chips in mixing bowl or with electronic mixer until completely incorporated.

Step 2:

Line 8x8 baking pan with parchment paper.

Step 3:

Place half of the mixed cookie dough into the baking pan & flatten until the pan is fully covered with an even layer of dough.

Step 4:

Spread desired amount of ice cream evenly over the flattened dough.

Step 5:

Smooth ice cream out evenly using the bottom of a large spoon.

Step 6:

Place pan in freezer for 30 minutes.

Step 7:

Place the other half of the cookie dough on top of ice cream.

Step 8:

Gently press your hands down upon the top layer of cookie dough.

Step 9:

Cover pan with parchment paper & freeze for 3-4 hours or until firm.

Step 10:

Cut frozen ice cream cookie dough into desirable size sandwiches. Enjoy!

    That looks really good!

    Now what use to replace the butter...and chips.......and sugar.....aaaaannnnd flour. That's it you are going to make me go shopping. Lol I actually have sugar, I guess. It is for my mommy SCOBY but a little for cookie dough might be ok and I have molasses to make it part brown (a tip if tou ever need to know it), Giradelli jumbo chips and a nutchopper to make them mini, coconut oil.....now to replace the flour with....?????? Sheesh I hope I have almond meal in the freezer otherwise I will have buy flour when I go out for the ice cream. I guess I have to go no matter what. I could do a banana chocolate hazelnut frozen filling, I suppose. Ideas!

    O.M.G. I've been all about the cookie dough lately. I see this in copious amounts in my future. I think that substituting nut butter for the butter and nut milk, make sure the chocolate chips are vegan and we have vegan nirvana!

    ....because ther is no cream in ice cream! Lol Enjoy!
