Corn and Black Bean Salad
1 can of black beans (drained and rinsed)
½ cup onion chopped (red, yellow or white works)
1 ½ cups of corn (fresh or frozen)
½ cup of cilantro (loosely packed)
2 cloves of garlic (chopped)
2 teaspoons of lime juice
3 dashes of jalapeno Tabasco (green bottle)
Sprinkle of cayenne pepper (optional)
1 teaspoon of ground cumin
¼ teaspoon of smoked paprika (regular works)
Pinch of salt and pepper
* You can also add Avocado, Red Pepper or Green Pepper
*if you want a sweet taste add a squirt of honey!
Add all the ingredients in a medium mixing bowl. Toss all the ingredients, make sure everything is well combined. Try to add the avocado last so it stays in it’s shape. I like to let my salad chill for an hour before serving. Serve with chips, add to a burger or tacos! Enjoy!
