This is my simple, yet very delicious version of the classic pumpkin pie that uses pantry ingredients.  I love having this recipe around for those times when I have company coming but don't have the time to go shopping for fresh ingredients.  I have put a twist on my typical recipe by decorating it with Pi day themed crust cutouts.  The cutouts are made to look like cowhide and are a delicious addition to your pumpkin pie.
Follow these simple steps and you can make the perfect Pi day pumpkin pi.

Step 1: Ingredients

For the Crust:
3 cups all purpose flour
3/4 cups of very cold unsalted butter
1 teaspoon salt
1 tablespoon sugar
1 teaspoon cinnamon (optional)
1/3 cup vegetable shortening 
6-8 tablespoons very cold water

For the Filling:
1 can pumpkin puree
1 cup of white sugar (for a richer pie use half brown sugar)
3 eggs
1 can evaporated milk (fat free or regular)
1 teaspoon nutmeg
1 tablespoon cinnamin

For eggwash:
1 egg yolk
1 tablespoon milk
