Crock Pot Meal: Italian Stuffed Chicken Breasts on Polenta with Stuffed Dates and Garlic Bread

Here's what's cooking at my house for dinner-- dates stuffed with bacon and goat cheese, chicken breasts stuffed with fresh spinach, sun-dried tomatoes, lemon peel, herbs and spices over polenta, and mozzarella cheese garlic bread.

Makes 6 servings.

Cooking Times:

The Stuffed Chicken - Preparation takes 25 minutes and cooking in the crock pot takes 5 to 6 hours on low or 4 hours on high.

The Stuffed Dates - Preparation takes about 15 minutes.

The Garlic Bread - Preparation takes 10 minutes and cooking takes 10 to15 minutes.

Step 1: Ingredients

1. Here is what you will need for the Italian Stuffed Chicken:
  • 6 boneless skinless chicken breasts
  • 6 oz. feta cheese, crumbled
  • 3 cups chopped spinach leaves
  • 1/3 cup oil-packed sun-dried tomatoes, chopped
  • 1 tsp minced lemon peel
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 1 can (15 oz.) diced tomatoes, undrained.
  • 1/2 cup oil-cured olives, pits removed.
  • Freshly ground black pepper
  • 1 box of 3 minute hot cooked polenta

2. Here is what you will need for the Stuffed Dates:

For 4 people:
  • 8 dry whole dates
  • 4 oz. goat cheese
  • 4 strips of thick bacon, fried
  • 1/4 tsp minced garlic
  • parsley, to taste
3. Here is what you need for the Garlic Bread:
  • 1 loaf of freshly baked bread
  • 1 stick of salted butter, room temperature
  • 2 tbsp minced garlic
  • 2 cups mozzarella cheese; shredded
  • Italian seasoning, garnish
  • dried parsley, garnish
  • paprika, garnish
  • 4 fresh basil leaves, garnish

Hi Yamiguru! I don't have a crock pot. Can I cook it on the stove in a plane pot or in the oven in the kind of container that is on the pic below?

(sorry my english is little rusty ^_^')

If possible, do you have any idea how long would it take to cook it and on how many C degrees?

No crock pot, no problem! I recommend cooking the chicken in a deep baking dish. The one that you suggested is fine. Preheat your oven to 350 degrees. Pour dice tomatoes with the juice and olives over chicken and bake, covered, at 350 degrees for approximately 45 minutes - 1 hour.

I'm so sorry, but I forgot to mention that my oven is the old fashioned type, it can only go up to 250 C :((

How long would it take to cook stuffed chicken breasts on that, and how many for garlic bread?

Ahh! It is not a problem at all, cooking_love, I knew I forgotten something in my first response to you, my apologies. Let's see, if I were to convert the temperature posted from fahrenheit to celsius you would roughly cook the chicken at 176 C and the bread at 190 C for the same amount of time as originally posted. Bake the bread for at least 10-15 minutes.

Just to summarize..

It''s 175 C for 45 minutes - 1 hour for chicken

and 190 C for 10-15 minutes for bread?
