Step 3: Stuffed Dates Directions

1. With a small paring knife, slice open each date from end to end.  Pinch the ends together to help remove the pit; place on a plate. Tip: The dates are easier to fill when they are bowl-shaped.

2. Combine goat cheese, minced garlic, bacon, and parsley in a medium bowl. This is your stuffing mixture.

3. With a butter knife, stuff each dates with your stuffing mixture. Garnish with parsley.

4. I put aside half a slice of cooked bacon and place small pieces of it on the top of each stuffed fig for presentation.

I make these as an appetizer. They help to take the edge off your tummy growling from the wonderful smell coming from your crock pot.  I usually make them about 10 minutes before the meal. Or make them and put them in the refrigerator then take them out 30 minutes before the meal.  You want to serve them at room temperature.
