Introduction: Dairy Free Cranberry Banana Bread
I was on a dairy free diet for a year. As a dessert lover, it was very difficult. Almost every recipe needs butter and milk. So, I turned my kitchen into a lab and started experimenting with different flavours and ingredients. This recipe is one of my favourites, I made it at least once a week and now that I can eat dairy again I still make it often.
This recipe is perfect if you don't have a mixer, it's very easy to mix by hand and you could have a fresh loaf of banana bread in less than 1 hour.
The cranberries and the bananas are the perfect match, they add a lot of flavour and colour to this dessert.
Gather your ingredients
- 3 eggs
- 3 ripe bananas
- 2 cups flour
- 1 cup sugar
- 1/2 cup coconut oil
- 1 cup dried cranberries
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
Step 2: Mix
In a bowl, mix the sugar and eggs, then add 1 cup of flour and oil. Finally add the rest of the flour and dry ingredients.
Mix until you have a smooth batter.
Step 3: Add Cranberries
Add the cranberries to the main mix. Or instead you could add chocolate chips, nuts, raisins. Mix.
In a different bowl mash the bananas.
Finally add the mashed bananas to the main bowl and mix.
Step 5: Bake and Enjoy
Coat a baking pan with oil and flour and pour the mix.
Bake for 45 min at 180 C.
