Some people make "pizza" waffles, by putting pizza dough and sauce and cheese in their waffle iron. That's adorable.

In this Instructable, we make waffles, out of actual pizza.

You read that right. Let's get started.

Step 1: Things You Need...

You are going to need left over pizza. What? You never have left over pizza? You are either a god amongst pizza eaters, or a timid little mouse when ordering pizza. You decide.

I've scaled this recipe to one slice, you can scale it up from there. The proportion are loose and a little more of that a little less of this won't be a big deal. It's still gonna be a pizza waffle.

Ingredients

  • 1 slice of cold left over pizza (in this case, roughly 140 grams)
  • 1/2 cup of AP flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 large eggs
  • 1/4 cup buttermilk
  • 1/3 shredded mozzarella cheese
  • 1/4 cup olive oil
  • Salt and pepper
  • Cooking oil spray (if your waffle iron tend to stick)

Equipment

  • Large mixing bowl
  • Food processor
  • Waffle Iron

Step 2: Blitz Your Pizza Into Pizza Crumble

Hand shred your pizza slice.

Place into the food processor and pulse it until it looks roughly like the picture above.

Step 3: Mix Your Batter

  1. In your large mixing bowl, mix the wet ingredients
    • 2 large eggs
    • 1/4 cup olive oil
    • 1/4 cup buttermilk
  2. Add the dry ingredients to the bowl
    • 1/2 cup of AP flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • salt and pepper (1/4 - 1/2 teaspoon of salt, based on how salty your pizza is)
  3. Mix them together till no dry flour is left. Lumpy is good.
  4. Mix in your pizza crumble.

Step 4: Waffling Time

  1. Preheat your waffle iron until it is piping hot (sometimes there is an indicator light, check your iron)
  2. Spray cooking oil if your iron requires it
  3. Add some mozzarella on the bottom
  4. Plop down some batter (in my waffle iron, about 2/3 of a cup does it. You have to experiment to find what works for yours)
  5. add more mozzarella on top.
  6. Close waffle iron
  7. Let it cook for... well, it depends on your iron. As a reference, on my flippable Hamilton Beach model, it seem to take about 3-3.5 minute per side. So a total of 6-7 minutes. You will need to experiment to find the right timing on your iron.

IMPORTANT: Just remember if you do multiple waffles, let the iron get hot again before your next batch. On my iron, giving it a minute does the job.

Step 5: Done

After the requisite wait on your iron's timing, please eat ASAP, or keep warm in the oven at 200F.

The cheese on the bottom and top of the waffle gives it this super crunchy umami bite. The pizza crumble, warm and cozy in its waffle batter will be like catching up with an old friend about the good old days, you know, like last night, when you had pizza. It will taste just like the pizza, but in a waffle.

Sure, this seems like a bit of work.

Sure, you can instead just slap that cold pizza in a cast iron pan and give it a cook on the stove to reheat.

Sure, you can instead just eat cold pizza straight from the fridge.

But you will be eating a lesser form of its former glory. Your pizza deserves better. YOU deserve better.
