Deliciously Moist Courgette (Zucchini) Cake with Orange Cream Cheese Icing by Jayefuu

While it doesn't look much and sounds rather unlikely, this recipe makes an amazingly moist fruit cake and the walnuts in it give it a great crunch.

It's similar to carrot cake in taste and a bit like bread pudding in texture. It's delicious.

Most importantly it gives me something different and interesting to do with the billions of courgettes I'm overrun with at the moment.

Step 1: Ingredients

For the cake:
  • 250g unsalted butter
  • 250g caster sugar
  • 4 eggs
  • 350g self raising flour
  • juice and zest of 1 orange
  • 1 tsp cinnamon
  • 1/2 tsp mixed spice
  • 350g courgette
  • 100g chopped walnuts
  • 100g sultanas

For the icing:

  • 125g cream cheese
  • 50g unsalted butter
  • 300g icing sugar
  • zest of 1/2 orange

This cake turned out great. I used up the last of the zucchini from the garden in a way that the the rest of the family actually appreciated.

Oh. My. God.

I am currently on one of those stupid 8 day diets and I have eaten nothing but vegetables for the last 5 days. That is the most delicious looking thing I have EVER SEEN in my ENTIRE LIFE. My mouth actually started watering when I saw the intro pic. There are 3 zucchini sitting in a bowl behind me. I will definitely be making this Sunday night and bringing it in to work on Monday morning!

Glad to be of help :) And it wouldn't have looked nearly as good had it not been for Scoochmaroo. It turned our really tasty but pretty ugly when I made it :p (see last picture in last step )

Yeah, When I first heard of it I thought Eghhhhhhh, then my neighbour made courgette buns for my to eat while I was looking after their cat :)

There;s one problem with this cake though, you keep eating it!

It tastes like a moist carrot cake with crunchy walnut pieces. Well worth making if you ever have too many courgettes.
