When fall rolls around, it seems only natural to want to make as many recipes as possible that use pumpkin! This Instructable will teach you how to take an inexpensive ingredient (Pumpkin) and turn it into something delicious. These appetizing pumpkin pancakes are not only delicious, but also gluten-free!
Step 1: Get the Ingredients
The ingredients that you will need are:
- 3 Eggs
- 1/2 Cup Canned Pumpkin
- 1 Teaspoon Pure Vanilla Extract
- 2 Large and Ripe Bananas
- 2 Tablespoons (Tbsp.) Pure Maple Syrup (Optional)
- 1/2 Teaspoon Ground Allspice
- 1/2 Teaspoon Ground Nutmeg
- 1 Teaspoon Cinnamon
- 1/4 Teaspoon Baking Soda
- 2 Tablespoons (Tbsp.) Butter (Plus extra for pan frying)
Step 2: Eggs
Crack the three eggs into a mixing bowl.
Step 3: Canned Pumpkin
Empty out 1/2 cup of Canned Pumpkin into a measuring cup. Once it is measured, dump it into the mixing bowl.
Step 4: Maple Syrup
This step is optional, but the maple syrup adds sweetness to the pancakes.
Measure out 2 tablespoons (Tbsp.) of syrup into a small spoon. Pour it into the mixing bowl.
Step 5: Vanilla Extract
Measure out 1 Teaspoon (Tbsp.) of Pure Vanilla Extract into a small spoon. Pour it into the mixing bowl.
Step 6: Bananas
Take the two large and ripe bananas, mash them up into a puree, and mix it in with the ingredients in the mixing bowl.
Step 7: Spices & Baking Soda
Sift the 1/2 Teaspoon (Tbsp.) of Ground Allspice, the 1/2 Teaspoon (Tbsp.) of Ground Nutmeg, and the 1 Teaspoon of Cinnamon into the mixing bowl.
Step 8: Butter
Melt about 2 Tablespoons (Tbsp.) of butter on a skillet. When it is completely melted, pour into the mixing bowl.
Step 9: Mixing
Using a spoon, mix all of the ingredients together. Make sure that they are thoroughly mixed before moving on to the next step.
Step 10: Cooking
Grease your skillet and spoon the batter into it to make pancakes of your desired size. When a few bubble appear, flip the pancakes once to finish cooking.
Step 11: Eating!
