Get some good coffee and brew it at home.
Bacon-Egg-Cheese Breakfast Muffin - yum!
Way better than drive-through.
Step 1: Assemble ingredients
First, go to a breakfast buffet and buy a bunch of bacon that was left over from breakfast. You can get a great deal on a bunch of bacon, and then just keep it in the freezer in a plastic freezer bag. Use as desired. Like now.
Second, purchase an microwavable egg poacher/cooker with a lid. See photo. Mine is a NordicWare Egg 'N' Muffin. Just a couple of bux at Walmart.
Gather up an English muffin, an egg, 2 pieces of pre-cooked bacon, a couple of tablespoons of milk or equivalent and a slice of cheese (your choice).
Get a fork to stir the egg.
Put aside a paper plate and a paper towel.
Step 2: Get the muffin ready
Put it in your toaster, but don't start cooking it yet.
Step 3: Get the egg ready
Gently break the yolk and stir the egg up, adding up to two tablespoons of milk, to the scrambled mixture. Stir again to mix.
I actually use soymilk, but once I used half-and-half and the egg came out a little lighter and fluffier.... and higher in fat. (Take your pick!)
Step 4: Add the bacon
Reach into that bacon bag in the freezer and dig out a couple of pieces of already-cooked bacon.
Break it or cut the bacon into small pieces.
Add the bacon to the egg mixture.
Stir it a little to distribute the bacon.
I do not add any salt or other seasonings because the bacon takes care of the flavoring issues.
I've never had to grease the Egg 'n' Muffin baker either.
Step 5: Cook the muffin and egg; get cheese ready
Push the toaster button down and get the muffin cooking.
Find a slice of cheese, in a flavor your choice. Every flavor I've tried has worked out great. My personal flavor was provolone. (Remove the wrapping if there is one.)
Also find a paper plate and paper towel for the next step.
Step 6: Assemble goodies and reheat
Remove egg/bacon mixture from egg poacher/cooker.
Now assemble all your ingredients onto the paper plate.
Suggested order is:
On the bottom half of the muffin, put the nice round egg.
Add the cheese slice on top of the egg. Cut off the corners that may overlap the egg and muffin and put them on top of the cheese slice.
Put the top half of the muffin on top of the cheese.
Cover the muffin with a paper towel. Microwave on high for 30 seconds (depends on your machine) or until the cheese has melted and the bacon has warmed back up.
