Beef tongue is in my opinion one of the most under used cuts of beef and one of the tastiest.
I have made this at parties and everyone "brave" enough to taste likes it. I explain to my more squeemish friends that it is a muscle just like any other cut of beef. It is not an organ like liver or the heart.
All I have to say to people who will not try it....more for me!
Step 1: Hardware Requirements
1 beef tongue
1 jar of your favorite Salsa.
1 slow cooker ( large enough to hold your beef tongue)
1 cutting board
Step 2: Cooking the Tongue
Step 2: Pour a little Salsa in the crock pot, just enough to have something for the tongue to sit on.
Step 3: Add the tongue to the crock pot
Step 4: pour the remaining salsa over the tongue.
Note: I did not specify what size bottle of salsa to use, This will depend on the size of tongue and crock pot. You will want enough liquid to barely cover the tongue. it will give off some water as it cooks so this does not have to be exact. If you don't have enough salsa, just pour in some water or stock.
Step 5: cook on low until it is done. I usually cook mine for about 8 hours. It will be cooked through in about 4 or 5 hours but will be tough.
Step 6: Remove the cooked tongue from the crock pot and remove the outer layer of skin from the
*** Caution, the tongue will be hot so let it cool down for a while before performing this step
Step 7: Slice the tongue. On the large end of the tongue there will be little pockets of fat so just take your time and trim the sliced meat.
Step 8: Place the sliced tongue back into the crock pot to warm back up with the cooking liquid.
Step 9: Serve the tongue like a stew or over rice or noodles.
