Introduction: Easy Carrot Cake

I'm all for making baking easy. You will find this carrot cake both easy and delicious. You can also use this mix for carrot cupcakes

Step 1: You Will Need

For the carrot cake:
  • 175g Caster sugar
  • 175ml Oil
  • 3 Large eggs
  • 140g Grated carrots
  • 175g Self raising flour
  • 1tsp Baking powder

For the frosting:

  • 2tsp Lemon juice
  • 100g Icing sugar *
  • 200g Philadelphia original cream cheese or similar product
  • Rind of lemon to decorate (optional), or you can use ...
  • Crushed walnuts / pecan nuts to decorate (optional)

* Alternatively, you can purchase ready made vanilla frosting and, either use it as it is or mix it with the cream cheese to taste

Notes:

  • If using a round baking tin, as I have, an 8" one will be ok
  • You can also use a foil rectangular baking tray
  • If you've used a foil rectangular baking tray, you can serve straight from there

Step 2: Mix Ingredients

  1. Place everything, except the carrots, into a bowl and mix well
  2. Add carrots and mix well

Step 3: Spoon Mixture Into Tin and Cook

  • Spoon into a lined tin
  • Bake in the centre of the oven on Gas Mk4 / 180*C / 350*F for 45mins

Step 4: Allow to Cool

  • When cooked, allow to cool when still in the tin / tray
  • Turn out onto a wire rack

Step 5: Frosting and Serve

  1. With the Philadelphia at room temperature, beat until soft
  2. Add lemon juice
  3. Add icing sugar, a spoonful at a time, and beat until all the icing sugar is mixed in
  4. Spread over carrot cake
  5. Sprinkle with crushed walnuts or pecan nuts or sprinkle with the rind of your lemon (optional)
