In this instructable, I will show you how to make cream puffs. This cream puff recipe is really easy to make, and is sure to impress your friends and family. Fill them with sweetened whipped cream, custard, chocolate sauce, whatever, and top with powdered sugar and you will be good to go! If I can make these, you can make these! Let's get baking!

Step 1: Ingredients/Tools

  • 1/2 cup of water (120ml)
  • 1/4 cup of unsalted butter (55g)
  • 1/4 tsp. of salt (1.5g)
  • 1/2 cup of flour (60g)
  • 2 eggs

Sweetened Whipped Cream:

  • 1 cup of heavy whipping cream (240ml)
  • 1/2 tsp. of vanilla extract (3ml)
  • 2 Tbsp. of granulated sugar (25g)


Step 2: Add, Stir, Boil

First let's preheat the oven to 400 degrees F. (204 C). Now let's turn on the stove top to medium heat, then add our water, butter, and salt to a pot. We will stir occasionally until the mixture starts to boil. Now remove the pot from the heat.

Now we add the flour all at once and stir until a dough forms, it won't take very long.

Step 4: Stir, Touch, Crack, Stir, Crack, Stir

Next we add the dough to a large bowl and keep stirring until the dough is only a little warm to the touch, we don't want the dough to be hot, otherwise it will cook the eggs. Now add the eggs one at a time, stirring in between until each gets incorporated. The mixture will act like it doesn't want to combine with the egg at first, but keep stirring and it will come together nicely.

Step 5: Stuff the Pastry Bag

Now we fill up our pastry bag or plastic bag with our choux pastry dough and use a round tip. A glass really helps with this process. Twist the top of the pastry bag.

Step 6: Squeeze and Bake

Next squeeze out the dough in a circular motion, creating a little mound of dough. Once you are done, you will have around 12 of them, depending on the size. Now bake them in the oven at 400 degrees F (204 C) for 15 minutes, then turn the oven down to 350 degrees F (170 C) and bake them for an additional 30 minutes. They should be nice and golden brown on the top.

Step 7: Whip That Cream

Now time to make our sweetened whipped cream, or you could make a custard if you like. For the whipped cream, add the heavy whipping cream to a bowl, add the sugar, and the vanilla extract, then mix it with a hand or stand mixer until peaks form. Now you are ready to fill up those puffs!

Step 8: Cut, Fill, Toppings

Now we finish them off buy cutting them in half with a knife, then add some whipped cream with a spoon or pipe it in, then put the top on. Next powder the top with some powdered sugar! Now eat them!!! Enjoy! :)

***If they are under baked when you cut them in half, go ahead and cut all of them in half, then place them back in the oven for about 5 more minutes at 350 degrees F.

We find it works better if the flour has been sieved first.
And don't open the oven door before they are finished otherwise they can collapse.

Interesting! I haven't run into the collapsing issue, but then again, I haven't opened the door before the 45 minutes was up. haha.

cheese filling is easy ratio will be 2-1-1. Use cream cheese or mascarpone (2), blue cheese ( I prefer Blue Auvergne) or use tiny crumbled very old cheese, if you do not like blue cheese(1) and shredded cheese(1) mix together till smooth. If to tick use a little bit of cream. Add some finely chopped baby onion, chives or parsley, pepper and salt to tast, stir and fill.

What kind of shredded cheese do you recommend? My kids love a lot of different kinds of cheeses.

I prefer Edammer but mozzarella is good too. Those two are in between the soft flavor of cream cheese and mascarpone and the more pronounced flavor of blue cheese or old cheese.
