The mini Cupcake maker is great for small households. Here is my recipe for making mini muffins for breakfast.
1/4 cup muffin mix = 1 serving
1/8 cup egg beaters
1/8 cup water
1/8 cup bran
2 or 3 dates
spray oil
paper mini muffin cups.
Heat cupcake maker. Mix all ingredients except dates. Chop dates and add. When maker is hot (5 min) spray with oil (so the pan will be easy to clean), put in paper cups then spray the cups (so the muffins will be easy to remove). Fill the cups and bake for 7 minutes.
