Introduction: Eggplant Spread
Hi everyone! In this short instructable I will show you how to make this easy, delicious and healthy spread that you, your family and friends are going to love! It's perfect for some home food parties, celebrations, or if you just want to add something wonderful to your breakfast. Use your imagination and eat it with whatever you like, the possibilities are endless!
Step 1: Ingredients
For this wonderful spread you will need:
- 2 smaller eggplants (or one bigger)
- around 100gr of white cheese
- 4-5 garlic cloves
- 2 tablespoons of olive oil
- juice of half a lemon
- Himalayan salt
Of course, the amount of spices is up to you, and you can try with different ones, but make sure it's salty enough! :)
Step 2: Baking the Eggplants
Turn on the oven to 200 Celsius degrees and while the oven is heating up, peel the eggplants. Cut them into circles 1-2 cm thick, and spread over the kitchen towel to dry. This is a very important step, because if the eggplant is not dry before baking, it will be bitter. Clean the garlic cloves and squeeze the lemon juice in the meantime.
When the eggplant is dry, spread it over the baking sheet in your pan, and bake it in the oven for about 15 minutes. It should be over when it's soft in the middle and you can stick the fork through.
Step 3: Blend Everything Together
When the eggplant is baked, wait a few minutes for it to cool down. Put all ingredients into a blender and puree until i's nice and creamy.
Aaaaand you're done! This very easy, but delicious spread is ready to be eaten! You can use it as spread on a piece of bread or pancakes, use it as a dip or dressing for some salad.
