Introduction: Eggs in Purgatory (Shakshouka)


This is an incredibly simple dish that basically consists of two items. The spiced tomato sauce and a fried egg, I think that I have managed to improve upon this even further with the addition of sliced chorizo and mozzarella cheese. I think at the moment that this dish is slightly obscure in the western world being far more common in the middle east and going by Shakshouka instead of Eggs in purgatory. This is an amazing dish and I would whole heartedly recommend you try to make it. 

Step 1: Ingredients

Ingredients:
1 tbsp olive oil (i used chill infused oil)
1/2 medium brown or white onion, peeled and diced
1 clove garlic, minced
1 green bell pepper, chopped
1 cans diced tomatoes
2 tbsp tomato paste
1 tsp chili powder (mild)
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
3 eggs
chopped parsley (optional, for garnish)
mozzarella (optional, for garnish)
chorizo, finely chopped (optional, for garnish)

Step 2: Sautéd Onions Spiced

The first step you want to Saute your onions, Basically just sweat them without giving them too much colour. I would also advice adding the spiced at this stage as well.

Picture 1. Add oil in to hot pan ( I used chili infused olive oil)

Picture 2. Add Chopped onion and garlic

Picture 3. Add salt and pepper

Picture 4 - 6. Add Cumin, Paprika and Chili powder

Picture 7. Add tomato paste

Picture 8. Mix them all together

Step 3: Reducing the Tomato Sauce

Picture 1. Add Diced Green Pepper

Picture 2. Add Tin of Tomatoes

Picture 3. Reduce the Tomato sauce down for a few minutes

Step 4: Final Touches Before Baking

Picture 1. Make an indentation in the mixture with the shell of the egg then place the cracked egg in there do this for all 3 eggs

Picture 2. Now place on all of the  the chorizo.

Picture 3. Add on top the mozzarella and place in the oven

Step 5:

Picture 1. 200°C 400°F Gas mark 6 for 10 minutes

Picture 2. This has just been removed from the oven

Picture 3. Plate up

Picture 4. Serve with salt and pepper and a green garnish I used parsley but I would suggest chives
