Elf Bites Shortbread Cookies

Tiny little bites of shortbread goodness. Great to give on a cookie plate or alone in a coloured cellophane bag. Makes 64 cookies.

Step 1: You will need

To make these cookies you will need
A medium sized bowl
Measuring cups
Measuring Spoons
Rolling Pin
Fork
Cookie Sheet
Pizza Cutter (a knife will work too)

Flour
White Sugar
Butter or Margarine
Coloured Sugar Sprinkles (I chose red)

I made these and used blue sprinkles. They were less nice looking than the red sprinkles. I used a little bit more butter than this recipe called for. It was really crumbly until I added more. When it came down to cutting the block into tiny squares, I couldn't keep the dough from completely collapsing. In the end, the cookies weren't that tasty. They were interesting, but something tasted funny. It could have been the blue sprinkles, honestly. These were definitely interesting. And regardless of the mysterious funny taste, they were freakin awesome in lemon yogurt!! I'll give these another shot one day, thanks for the recipe!

I must say I had the same exact problem. I used green sprinkles for one batch and red peppermint sprinkles for the second. I couldn't get mine to stay in a sheet either. I tried making little round cookies by squeezing them in my palm. When I cooked them and tried them, I must say mine also tasted a little funny. Not sure what I did wrong...... but thank you for the recipe it was fun to at least try them :)

I made these last Christmas and gave them away as gifts.  They were simple to make and looked just like your picture.  One person I gave them to opened them up immediately and ate them until they were all gone!  They were wonderful.  I will make them again this year.  Thanks for sharing your recipe.

Sounds delicious! ....But I would make the intro picture more inviting - make it look as delicious as the cookie really deserves. For example arrange them nicely on a platter or place one cookie on a napkin of complementary color.
