Extreme Jalapeno Popper Pie by bajablue

This scrumptious, show-stopping Quiche is sure to wow everyone at the breakfast table! 

Mexican Cheese-stuffed jalapenos and spicy Chorizo are tucked inside a savory Dutch Baby crust to create an extreme Quiche the French have probably never dreamed of. ;-)

Extreme Jalapeno Popper Pie isn't a recipe you can throw together in 5 minutes ... but I think you'll agree that food this delicious is definitely worth the extra effort.

Step 1: Shopping list and Tools:

Here's the complete shopping list:  
  • 4 large eggs
  • 1 cup half and half
  • 1/2 cup milk
  • 8 oz. Mexican Chorizo sausage
  • 8 Jalapeno Peppers- medium
  • 1/4 cup Red Peppers- any variety
  • 6 oz Chihuahua cheese- (may substitute Monterey Jack)
  • 8 oz Colby-Jack Cheese
  • 1/2 plus 1/3 cup flour
  • 1/2 cup yellow onion- chopped
  • 3 Tablespoons Butter
  • Garlic Salt
  • Black Pepper
  • Tabasco 
  • Ground Cumin
Not to worry... I'll break this list of ingredients down in each Step as needed and used. ;-)  

Important Tools:
  • This pie is made with a savory Dutch Baby "pie crust".  You'll need to use a #5 cast iron skillet -OR- a capacity-equivalent ironstone baking dish for peak results.
  • An electric hand mixer.  
  • latex gloves to handle the jalapeno peppers.
  • Potholders that withstand extreme heat.

Yum - this sounds amazing! My husband will be out of his mind when he sees this. Do you ever make your own chorizo? It is surprisingly easy.

Hi wold!  I live on the coast of Baja so I buy my Chorizo here.

It's very inexpensive... and it's also "authentic"... which means it has some ingredients I'd really rather not think  about, if you know what I mean? ;-)

I have to figure out how to downsize it or I'd be eating it for a week ! I know that ceramic ramekins don't work well for yorkshire pudding but I never tried them for dutch babies or maybe this is an excuse for getting a small cast iron skillet..= )

We ate this over a course of 3 days.
It reheats (microwaves) GREAT!!!

P.S. I've never heard of this "Dutch Baby" crust is it a common thing? Also, what's the texture like? Is it flaky or more like bread. It looks more like a bread type crust. If so I'm digging it!

Well, gib... It's an eggy-faux-crust-like-yorkshire-pudding for lack of a better description. ;-D

The "crust" texture isn't flakey, and it's different than the quiche filling.

Here's an Instructables link to Dutch Babies . They are usually served sweet.
