Introduction: FLUFFY VANILLA CUPAKES

Step 1: CUPCAKE BATTER

198g / 1 & 3/4 Sticks Unsalted Butter

225g / 1 Cup Caster Sugar

2 Large Eggs

250g / 2 Cups Plain Flour

1tsp Baking Powder

1/2tsp Baking Soda

1/4tsp Salt

80g / 1/3 Cup Buttermilk

2tbsp Milk 2tsp

Vanilla Bean Paste

Beat the butter and sugar together until light and fluffy. Whisk the eggs together and add to the batter. Sift in half of the dry ingredients and beat into the mixture. Next, add the buttermilk, milk and vanilla and beat again. Sift in the remaining dry ingredients and gently mix until all the flour is incorporated. Spoon the batter into cupcakes cases and bake at 170 degrees C / 338 degrees F for 18 minutes. Once baked, leave to cool on a wired wrack.

Step 2: VANILLA BUTTERCREAM

Ingredients

226g / 2 Sticks Unsalted Butter

375g / 3 Cups Icing Sugar

60ml / 1/4 Cup Double Cream

2tsp Vanilla Bean Paste

Beat the butter until light and pale. Add the icing sugar and beat for 10 minutes until the buttercream has doubled in volume. Add the double cream and vanilla and beat for another 2 minutes. Pipe the buttercream on top of the cupcakes and decorate with sprinkles.
