- Rice - already cooked (use leftover rice)
- Spring Onions – chopped
- Onions - chopped
- Chopped carrots
- Finely diced Celery
- Chopped onions
- Ham – diced
- Pork meat - diced
- (NOTE: use any meat - cooked leftovers or fresh meat)
- Cilantro leaves (optional)
- Finely chopped garlic
Add chopped onions, when onions start to get transparent, add carrots, corn (if fresh), celery and then garlic and the meat.
Stir fry until meat is almost done if using fresh meat.
Clear a space in middle of pan and add some oil, then toss in 2 eggs (stirred). Add salt and pepper.
Pile the surrounding ingredients on the eggs and stir so everything is thoroughly mixed in.
Add the rice slowly, stirring it in and breaking up any clumps.
When the rice starts to 'pop' (grains jump up from the pan), it's ready.
Serve with Sriracha if you like things hot.
