George’s of the Cove is a beautiful restaurant located in La Jolla, CA and makes a wildly popular soup. This is my take on this long-time favorite. Make sure to watch the video for full instructions.
For this video I made a 4x batch because I was having a large party.
Here's the regular recipe below:
1⁄2 cup unsalted butter
1⁄2 cup diced carrot
1⁄2 cup diced onion
1⁄2 cup diced celery
1 cup broccoli stem, peeled and diced
2 teaspoons dried thyme
2 teaspoons dried oregano
1⁄4 cup dry white wine
4 cups chicken stock, hot
1 tablespoon Worcestershire sauce
1⁄2 teaspoon Tabasco sauce (I like Cholula)
1 cup diced smoked chicken (recipe follows)
1 cup cooked black beans
1 cup broccoli floret
2 cups heavy cream
salt & fresh ground pepper, to taste
Step 1: Make Stock
Boil a chicken in a large stock pot with water and a quartered onion. (or your favorite chicken stock ingredients)
Step 2: Chop Chop!
Use a food processor to cut carrots, broccoli stalks, onions, celery and broccoli florets. Items should be cut fairly finely. Pulse each item for best results and set aside in a bowl. Keep broccoli florets separate.
Step 3: MMM Butter
In a large skillet melt a stick of butter. Place, carrots, celery, broccoli stalks, and celery and sauté until soft. Do not add the broccoli florets yet.
Step 4: Mix Ingredients
Add veggie mixture to a soup pot and pour in broth. If your chicken stock isn’t enough liquid you can add stock from cans as well to supplement.
Add black beans.
Add white wine. I use cheap Trader Joes wine (thanks almost 2 buck chuck!)
Add salt and pepper and a little hot sauce, or if you only have siracha that will do to.
Add a pinch or dried oregano and I had some thyme in the garden, you can also use dried thyme too.
Remember, with seasoning best to start with less and always add more. Let this simmer for at least 30 minutes.
Step 5: Tastes Like Chicken
Take the chicken from the stock (it should be fully cooked) and tear off the meat and cut/tear into little pieces.
Step 6: Liquid Smoke
Add the chicken and the broccoli to the soup pot.
Add liquid smoke, which is like a cheat for not actually having to smoke a chicken but still getting that awesome flavor!
Add Worcestershire sauce and heavy cream.
Stir and serve hot with bread!
