I live down South in North Carolina and made a "root cellar" that stays about 58 degrees pretty much year round by digging a hole big enough to fit a 30 gallon galvanized trash can in. The can is completely sunk in the ground. I lined the can with closed cell foam and lined the lid of the can with the same. This works like a charm for pickling and storing things like potatoes and cabbage.

This might not work where your water table is high in that if the hole fills with water, the can will float up.

Glad you liked my original photo of my own jar of homemade kimchi, as featured in my own Instructable, enough to lift it and use it without crediting the source. It's very flattering.

You may be misunderstanding a "Guide" - it's a great thing to be added to an Instructables Guide, more people will see your wonderful 'ible when they click on the guide to see all the posted 'ibles for Fermintation. Clicking on your photo brings one right to your 'ible. Really, it's a good thing.

Ouch, whatta pun! You make my head hurt. (I'd rather make yogurt!)
