Not quite eggs, pancakes, or biscuits, Finnish Pancakes are most likely the world's most versatile type of brunch food. Whether you decide to serve it topped with Grade B maple syrup (yum!) or serve them with crumbly feta, diced tomato and a chiffonade of basil, these popover -style pancakes hit the spot every time! :)

They are very easy to make and are traditionally cooked in a 9x9 casserole dish. I used muffin tins to make individual servings more accessible! So, check out the ingredients list below and follow my easy step-by-step directions to be on your way to a new family favorite! Enjoy!!!

Ingredients to make 6 individual Finnish Pancakes
-  2 large eggs
- 1/2 cup of milk
- 1/2 cup of flour
- 1/8 tsp sugar
- 1 T butter
- Toppings you'd like to try: Soft Cinnamon Apple Slices, Grade B Maple Syrup and Powdered Sugar, Cinnamon and Sugar, Feta with Tomato and Basil, Tomato Sauce and Mozzarella Cheese, Spinach and Bleu Cheese Crumbles

Hmm. I'm Finnish but I've never heard of this delicacy. Where did you get the recipe?

Really? It's Finnish name is supposedly Pannukakku. The Finnish pancake recipe I inherited was from a New England cookbook and I assume is some type of adaptation on the original recipe.
The ingredients are the same, but the shape is very different. Normally the dough is just poured on a baking tray so the end product is a big square.
