Not quite eggs, pancakes, or biscuits, Finnish Pancakes are most likely the world's most versatile type of brunch food. Whether you decide to serve it topped with Grade B maple syrup (yum!) or serve them with crumbly feta, diced tomato and a chiffonade of basil, these popover -style pancakes hit the spot every time! :)
They are very easy to make and are traditionally cooked in a 9x9 casserole dish. I used muffin tins to make individual servings more accessible! So, check out the ingredients list below and follow my easy step-by-step directions to be on your way to a new family favorite! Enjoy!!!
Ingredients to make 6 individual Finnish Pancakes
- 2 large eggs
- 1/2 cup of milk
- 1/2 cup of flour
- 1/8 tsp sugar
- 1 T butter
- Toppings you'd like to try: Soft Cinnamon Apple Slices, Grade B Maple Syrup and Powdered Sugar, Cinnamon and Sugar, Feta with Tomato and Basil, Tomato Sauce and Mozzarella Cheese, Spinach and Bleu Cheese Crumbles
Step 1: Mixing and mixing...
Step 2: Add the dry ingredients...
Then you add the 1/8 teaspoon of sugar and 1/2 cup of flour. Carefully mix in the flour using a small spoon or fork (it can get pretty messy).
Step 3: Now the milk...
After the flour and sugar have been mixed into the eggs thoroughly the milk can be added to the mixture. I switch to a whisk at this point to make sure I don't have any hidden clumps in my mixture.
Step 4: The final batter...
The final batter should be on the thinner side, very much like a traditional pancake batter. The batter should be set aside, while the pan is being prepared.
Step 5: Preparing the pan...
Microwave, or melt over heat, the butter until it becomes a liquid. Then disperse the melted butter into the baking pan in equal amounts and swirl the butter around so that it coats the sides and corners of the pan.
