Flourless Chocolate Cupcakes

Flourless chocolate cake is decadent and delicious - and pretty darn easy to make! In cupcake form, they're perfect for parties, work/school lunches, or snacks, and are pretty cute. You could frost them, but on their own they're pretty wonderful, and since they're flourless, they're also gluten-free!

Step 1: You'll Need. . .

Software:
  • 4 ounces bittersweet chocolate
  • 1/2 cup butter (one stick)
  • 3/4 cup white sugar
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder (dark chocolate cocoa powder used here)
  • pinch of salt (optional but suggested)
  • 1/4 teaspoon vanilla extract (optional but suggested - you can also add some coffee and/or chocolate extract to make them extra yummy)
Hardware:
  • large microwave safe mixing bowl
  • wire whisk, spoon, or spatula
  • muffin tins
  • cupcake/muffin papers (cups)
  • spoon or small scoop

Step 2: Mix and Bake!

  1. Preheat oven to 375 degrees F
  2. Break up chocolate into medium/small chunks and place in bowl with butter
  3. Microwave for 45 seconds, stir, and microwave an additional 30 seconds (if you don't have a microwave, you can melt the butter and chocolate in a glass bowl over a pot of water on the stove - a bain marie or double boiler)
  4. Add the sugar and cocoa powder and stir until combined
  5. Add the eggs and stir
  6. Add the salt and vanilla extract (if using) and stir
  7. Place cupcake papers in the muffin tins
  8. Fill about a half of the way full of batter
  9. Bake approximately 14 minutes or until bubbly and slightly set-up
  10. Allow to cool about 10 minutes
  11. Serve with ice cream, whipped cream, or on their own! (A few topping ideas are shown below, if you're into that sort of thing)

What type of cream is inside? Did you add icing? It looks really lovely :)

My daughter was diagnosed with celiac, so this is my first attempt to make a flourless cake. We added some peppermint extract to make them more 'holiday' feeling. She's so excited to try them!! Can't wait myself! Thanks!

I haven't tried adding mint, but it sounds like a great idea, and I hope you enjoy them!

You might also want to try out this bread. It's like a hearty wheat bread, but is gluten-free as well. And these little cheesy puffs are also gluten-free and pretty yummy.

Thanks so much for this recipe - I am on a wheat free diet and I really miss cake! These cakes are just like proper cake but without the nasty wheat that makes me ill and they are soooo yummy!

I ate mnie with smashed rasberries and creme fraiche. They tasted amazing! Can't believe how quick they were to make!

You might also want to try out this bread. It's like a hearty wheat bread, but is gluten-free as well. And these little cheesy puffs are also gluten-free and pretty yummy.

Thanks so much! They make between 6-8 usually, many more if you go with mini-cupcakes.

Made yesterday. Quite simple, quite good. I think I could have let them cook a tad longer to set more, but they still turned out great. Unfortunately, I was out of bittersweet chocolate, so I used semi-sweet. I'm certain I'd have preferred the bittersweet more. Did throw in some dutch process cacao powder to darken and enhance the chocolate some.

I made these yesterday evening for a colleague's birthday and I am so impressed. As well as being literally the easiest things in the world to make, they are also yummy yummy nom nom! I am currently thinking up things to add to the next batch such as nuts, chocolate chunks and so on!

So glad you enjoyed them! I really love how simple (and totally delicious) they are - people are always impressed. I've added chocolate chunks and frequently add a little salt and some chocolate extract to the batter. A little cinnamon is also really yummy!

Do you think these would take an icing? I was thinking boiled white icing or vanilla buttercream... I don't know what the surface would hold better. I miss cupcakes. Not only am I GF, I'm allergic to the gums people use to replace gluten in GF recipes.

They're rather firm, so yes, I think just about any icing would be fine. Personally, I like them without, mostly because they're so dense and rich on their own. Please do let me know what you decide to go with though and how they turn out!

Well, I don't cook, so you have to take that into account when I tell you that 6 people got to eat these before they vanished, and everyone mmm'ed and ooooh'ed over them - a BUNCH - and only one person was gluten intolerant - the rest of us adored them anyway!!

And my friend? :):) She almost got teary over them. A passing smart @ss kid said "can I have one?" and she clutched the box of them to her chest and scoffed "not a chance!!!" :)

they rose well, and fell about halfway (though my kids were literally dancing on the table as they cooled, so that wouldn't have helped...)
They had lots of air pockets/bubbles inside, and tasted absolutely perfecto.

They're actually more like a brownie, I guess, since they don't puff up all that much, and they don't fall after they've cooled.
