Homemade strawberries and lemon no-bake cheesecake

Step 1: Ingredients and Preparation

1 lemon juice

Fresh strawberries

3 cottage cheese

2 packages of cream cheese ( strawberry flavored )

1/3 cup melted butter

2 cups white sugar

2 packages whole wheat biscuits crumbs

Step 2: Make the Base

In a bowl, stir together the whole wheat biscuits crumbs , sugar and a dash of salt. Add melted butter and mix well. Press into the bottom of an 8 or 10 inch springform pan. chill in the fridge until firm

Step 3: Into Action !

In another bowl, beat together the cream and cottage cheese split the contity in 2 equal halfs : mixt in the first one lemon zest juice and strawberry puré in the second. mix until becomes thick. Add the sugar and continue to beat until stiff.

In another bowl, beat cream and cottage cheese, divide it into 2 equal half: in the 1st half add lemon juice and zest in the 2nd half add strawberry puree. stir until becomes thick. Add sugar and continue beating until firm.

Step 4: Assemblage

cut some strawberries vertically and place it into the edge of the springform pan like so , pour the lemon cream mix let it cool in the fridge for some time so you cand pour the strawberry cream mix

Step 5: Strawberry Sauce / Compote

cut the rest of the strawberries ,put it in a saucepan with sugar and some lemon juice; cook until it thickens let it cool partially pour on top of the cheesecacke

Step 6: Decoration

Finally let the cheesecake cool in the fridge preferably overnight !
cut it with a clean knife every time . you can decorate it with some mint lemon/strawberry slices & BON APPETIT !
