Introduction: Fried Fruit
I like fruit and I like frying things. I decided to combine the two and see what happened.
Step 1: Gather Ingredients and Tools

3 ripe peaches
1 apple (added by my wife after the fact)
1.5 cups flour
2 egg yolks
3/4 cup cold water
1.5 Tbsp olive oil
2 Tbsp cinnamon paste
4 egg whites
Vegetable oil (enough to cover–have a whole bottle handy)
For coating the fried batter:
Step 2: Make Cinnamon Paste
The original recipe calls for brandy. I decided I wanted a cinnamon flavor to mine. Make the paste by combining 1 tbsp. of cinnamon and 1 tbsp. of honey in a small bowl. Mix the two well.
Step 3: Mix the Batter
Combine the salt, flour, and egg yolks in a mixing bowl and mix on low. If you don't know how to separate the yolks from the white of the egg I use the method in this video. Add the water slowly as you mix. Then put the batter in another bowl and let it rest for two hours. I put mine in the refrigerator to rest. Make sure you cover it.
Step 4: Preparing the Fruit
While the batter is resting you can get your fruit ready.
To easily peel the peaches make a slit cross ways along the bottom of the peaches. Then boil the peaches for about 30-60 seconds. Place the peaches immediately in a bath of ice water. The skin should slide right off. I had better luck with the white peach I used than the regular ones. I would suggest using freestone peaches.
Peel and slice your banana.
Core and slice up your apple.
Step 5: Fold in Egg Whites
Now that your batter has rested you can add the egg whites. You will put two egg whites in the mixer and mix on high until you have high peaks. For how to do that check out this Youtube video.
Mix about 1/4th of the eggs into the batter. Then fold in the rest of the eggs into the batter. If you do not know how to fold check out this Youtube video here.
Step 6: Frying Your Fruit
Here is the fun part, and by fun I mean dangerous. You are cooking with hot oil that could easily burn and scar. If you are not an adult find one to help you with this part.
Pour enough oil to cover your fruit when you put it in and turn the heat up to 350°. While the oil is heating you can drop some of the fruit into the batter. This will let it get a good coating.
Test the oil by dropping in a tiny portion of the batter. Once the batter browns you can begin adding the batter covered fruit. Let them fry for a little less that a minute. Make sure you flip the fruit with the metal spoon so all sides get browned.
Once it is done frying place it on a paper towel and cover with powdered sugar.
Step 7: Eat!
My kids loved the fruit and ate it quickly before I could snap any pictures of them eating. You have to eat these quickly. They go limp and soggy soon after frying. Even soggy they taste good, but turn into a mess.
