Fruity Sicilian Watermelon Gelo (Pudding)

I love watermelon and I could eat it all day, but I also adore jiggly desserts so when I heard about watermelon gelo, I had to try it! It's easy to make and absolutely yummilicious! It's also vegan, gluten free, pretty healthy, and super refreshing... ahhhh!

*Please note it is more like a dense pudding than jello =)

Step 1: Gather your ingredients and tools

Ingredients:
About 9 cups of seedless watermelon chunks (you will need 4 cups once it is puréed)
3 tbsp sugar, maple syrup, agave nectar, or other sweetener (but please don't use the artificial stuff!)
6 tbsp cornstarch
1 tsp vanilla extract
1/3 tsp ground cinnamon

Tools:
Blender or food processor
Large fine mesh sieve (or cheesecloth)
3-quart saucepan
Rubber heatproof spatula and/or wooden spoon

Optional garnishes -- get creative!
Whipped cream
Roughly chopped pistachios, almonds, or other nuts
Grated semisweet chocolate
Ground cinnamon
Chopped up oreo cookies

Have you tried this with any other fruits? I'd be interested to know how it worked with strawberries, oranges, etc.

Oooo! I never thought to use other fruits, but now that you mention it, I am going to give it a go. I'll bet it would be wonderful with either of those or maybe cherries! Please do post a comment if you try it with a different fruit! Thanks for the idea =)

Can I just ask how much a cup is where you live? (Where I live, we don't use cups as a measurement at all and it seems that it's different per country where they do use it)

For us Brits, and apparently, the Commonwealth (according to Wikipedia) 1 cup = 250ml.

The US 'Legal' cup = 240ml

that looks absolutely delish !!! i didn't think u could do that, hows the texture is it smooth like jello. Do u think you could do it with unflavored gelatin for a smoother texture maybe ?

You know, I was trying to describe the texture to some friends before they tried it and it's less "crunchy" (for lack of a better word) than jello, but more smooth like pudding but denser... not sure if that helps :-P
And you might be able to get a different texture using gelatin, but I try to stick to a vegan diet when possible, so I do not use gelatin. If you do try it, please let me know how it turns out so I can share with my friends! =)
