I had an old sack of nice hardwood charcoal from god-knows-where. The smoke smells better than briquettes, but I don't make any other claims for the stuff.

Would high temp. paint solve the zinc issue. They make paint for grills.

Important safety tip! Since you are using a galvanized garbage can, you're going to end up burning off a lot of the zinc. You should heat it thoroughly without food and with good (outdoor) ventilation until some of the zinc burns off. Avoid breathing the fumes, or you can get metal fume fever.
