Gazpacho

Gazpacho
Cool and refreshing, this is the perfect summer dish.

Step 1Ingredients

Take advantage of those in-season veggies! This, during the summer, is cheap as hell.

ingredients
4 cups tomato juice
1 small red onion, minched
1/2 green bell pepper, deseeded and minced
1/2 red bell pepper, deseeded and minced
1 cucumber, chopped
2 cups chopped tomatoes
2 green onions, chopped
1 shallot, minced
1 clove garlic, minced
3 tablespoons lemon juice (fresh is better)
2 tablespoons red wine vinegar
1 teaspoon dried cumin
1 teaspoon basil (fresh preferred, if fresh use 3 tsp and chop it up)
salt and pepper to taste

optional:
1 tsp sugar
1/2 tsp (or thereabout) lemon zest (take a fine grater to the outside of the lemon and grate off the yellow part until you've got about a pinch.)

Eso no es gazpacho, el gazpacho lleva mucho tomate, pimiento rojo, pepino y ajo.

That isn't gazpacho, the ingredients for the gazpacho are a lot og tomatoe, red peper, cucumber and garlic.

Maybe this is a kind of "ferran Adrià's Gazpacho"... But is not gazpacho.
Gazpacho with onions, lemos, cumin, and Basil (Basil? Yes?) I can't believe!

But this recipe I'm sure is refreshing and for summer, this is good too!

Gazpacho? It's not. At least it's not the original recipe. The gazpacho (originaal from Spain), have many ways to be made dependind on what spanish province you are, but basic recipe is the same. You need: Several tomatoes (maybe 2 Kg) 1 Green peeper (medium size) 1 /2 Cucumber 1 Garlic Bread (half piece). No matter if it is fron some days ago and is hard like steel. Some Water, salt and vinegar. These are the main ingredients. Of course, all fresh. With it you can get a real, tasty and perfect Spanish gazpacho. The key is the tomato: the gazpacho taste depends on the tomatoes quality. Really the recipe of this instructable... i don't know what kind of gazpacho is, neither if it's must be named gazpacho. Maybe a variant, but a very strange variant. Sorry but the recipe looks more a vegetable soup than real gazpacho.
