These are one of the best ginger cookies i have ever tasted.  

Step 1: Ingredients

Ginger Pecan Cookies

1 1/3 c Sifted all-purpose flour
1/2 tsp.  baking soda
1/2 tsp each of cinnamon, cloves, nutmeg
1 stick butter or margarine (when did that change to Vegetable oil spread)
1/2 c sugar
1/2 c brown sugar (light)
1 egg
1/2 c chopped crystallized ginger
1/2 c chopped pecans or raisins, walnuts, almonds, or skip for a ginger only cookie

Cream together Butter, sugars continue beating until light and fluffy 4-5 min.  Add egg mix to combine.

Add dry ingredients flour, soda and spices.

Fold in crystallized ginger and nuts or raisins.

Place by teaspoons  (small scooper) on to baking sheet about 2 inches apart.  Bake at 370o edges are lightly browned 10 to 12 min.

Step 3: Cut

Cut the candied ginger into small pieces.

Step 4: Creem

Cream together Butter, sugars continue beating until light and fluffy 4-5 min.  Add egg mix to combine.

Step 5: Sift

Add dry ingredients flour, soda and spices.

Fold in crystallized ginger and nuts or raisins.

Step 6: Bake

Place by teaspoons  (small scooper) on to baking sheet about 2 inches apart.  Bake at 370o edges are lightly browned 10 to 12 min.
These sound so good. I normally make ginger cookies for Christmas, but these sound so much better. Yay pecans! :D
