Step 2: Making the Gingerbread Cookies

Cream together the pudding mix, butter, and brown sugar. Stir in the egg. Combine flour, baking soda, ginger, and cinnamon. Stir into the pudding mixture. Cover, and chill dough until firm, about an hour.

Preheat oven to 350 degrees. Grease baking sheet. On a floured area, roll out dough to 1/8 inch thickness, and cut into shapes. Place them 2 inches apart on pan, and bake for 10 minutes in a preheated oven. Then let them cool.
These look really tasty! I like all those flavor combinations too, pumpkin, butterscotch, and gingerbread. The perfect Fall dessert!
